Turn up the dial on the grilled flavor with this Grilled Honey Lime Salmon with Grilled Veggies!  This easy recipe is perfect for summer grilling in the backyard!

On the first Saturday of each month, Home Depot hosts a Kids’ Workshop.  They supply the tools and a different building kit each month.  One of my curling teammates told me about these workshops a couple of years ago, and we’ve been going ever since.  Curt loves his “building days”!  Home Depot even gave him an apron to wear as well as a new pin to add for each of the workshops.  He enjoys putting that apron on and showing us his pins.  Of course, in true toddler fashion, he didn’t want to put his apron on when I was actually taking pictures.

This past workshop was constructing a spring garden craft, and Curt now has his “art” hanging in his room.  And Dad managed to escape without getting his finger hammered.  It was a win-win for everyone!

I enjoy taking Curt to the Kids’ Workshops as it gives me an excuse to go wander around the grilling section once we’re done.  This past time, I stopped and drooled over some new grills.  You guys know how much I love to smoke foods, so I was picking up another bag of mesquite-flavored wood chunks.  That’s when I looked down and noticed the new Kingsford Hardwood Charcoal Briquettes.  This charcoal is made from all natural American hardwood, and you can actually see pieces of the hardwood in the briquettes themselves.  Kinda cool, huh?  Needless to say, a bag of this charcoal landed in my cart.

One of the coolest things (aside from the taste) about Kingsford’s Hardwood Charcoal Briquettes is the fact that they create higher heat, so they’re perfect for searing steaks, chops or (in this case) salmon.  And because of the hardwood, these briquettes produce a low amount of ash which makes them perfect for smokers and ceramic grills.

Angie had mentioned grilling salmon the other day, and I knew this would be the perfect opportunity to try out these briquettes.  The grilled flavor was out of sight good!  We actually had leftovers (a rare event when the grill is out), and we heated ’em up for lunch the next day.  That Grilled Honey Lime Salmon tasted like it had just come off the grill!

Since I knew I’d have the grill heated up, I decided to add an assortment of veggies in there with the salmon.  Have you ever grilled onions?  They’re amazing!  Just cut an onion in half, brush it with a bit of olive oil and toss it on the grill alongside the main course.  Trust me when I say you will be rewarded with flavor!  In addition to those grilled onions, I also added some sliced eggplant, yellow squash and tomatoes with the Grilled Honey Lime Salmon.  Serve all of that over a bed of rice, and you’ve got an easy grilled dinner that’ll become a family favorite for sure!

Sometime this week, swing by Home Depot and pick up a bag of Kingsford Hardwood Charcoal Briquettes.  Then put this Grilled Honey Lime Salmon on the menu this weekend!  Heck, this would actually be a great recipe to serve family and friends on Memorial Day this year.  The flavor is amazing, and the recipe comes together quite easily.  Sign me up for easy, tasty grilled recipes!  As for me, I’m already looking forward to next month’s Kids’ Workshop when I can help Curt with his project…and then wander through Home Depot’s grilling section!

Grilled Honey Lime Salmon with Grilled Veggies

Turn up the dial on the grilled flavor with this Grilled Honey Lime Salmon with Grilled Veggies!  This easy recipe is perfect for summer grilling in the backyard!

For the Grilled Salmon

  • ¼ cup olive oil
  • ¼ cup lime juice ~2 limes
  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 tsp minced garlic
  • ½ tsp black pepper
  • 4 6-oz. salmon fillets

For the Grilled Vegetables

  • 1 medium eggplant cut lengthwise into 4 thick slices
  • 1 medium yellow squash halved lengthwise
  • 1 medium red onion halved
  • 2 Tbsp olive oil divided
  • 1½ tsp salt divided
  • 1½ tsp dried dill divided
  • 4 medium tomatoes halved

For Serving

  • Cooked rice
  • {optional} green onions for garnish


  1. Using a glass baking dish, whisk together olive oil, lime juice, honey, soy sauce, garlic and pepper. Add salmon fillets skin side up. Cover and refrigerate for 15-45 minutes.
  2. Using Kingsford Hardwood Charcoal Briquettes, stack briquettes in a pyramid. Add lighter fluid per the package instructions. Light charcoal and let burn until they begin to ash over (~15 minutes). Spread briquettes into a single layer. (If your grill has a thermometer, aim for ~350°-375°F.)
  3. Brush eggplant, squash and red onions with 1 Tbsp of olive oil. Sprinkle tops of veggies with 1 tsp salt and 1 tsp dried dill.
  4. In a separate bowl, toss tomatoes with ½ Tbsp olive oil, ½ tsp salt and ½ tsp dried dill. Set tomatoes aside.
  5. Remove salmon from marinade and place grill flesh-side down on one side of the grill; discard any excess marinade. Grill for 7-8 minutes, flip and continue grilling for 3-4 minutes or until salmon is opaque and fully cooked.
  6. Meanwhile, place eggplant, squash and onion cut-sides down on other side of grill. Grill for 8-9 minutes, turning occasionally. Transfer veggies into a bowl; set aside. (Tip: The timing lines up perfectly if remove eggplant, squash and onion from the grill when you flip the salmon. Go ahead and add tomatoes to the grill.)
  7. Place tomatoes on grill cut-side down and continue grilling for 3-4 minutes.
  8. Remove tomatoes and salmon from grill and let rest for 5 minutes.
  9. Chop grilled eggplant, squash, red onions and tomatoes into small pieces.
  10. Serve grilled salmon and veggies over cooked rice.
  11. {Optional} Garnish with freshly chopped green onions before serving.
